600g any MSC certified fish fillet, diced

1 tsp cumin

1 tsp paprika

2 avocados, cut in narrow slices

1 fistful of salad leaves

2 tablespoons butter

Salt & black pepper

Tortillas

Mango salsa

1/2 red onion, finely chopped

1/2 cucumber, peeled

1 bunch coriander (cilantro)

1 red chilli, finely chopped

2 tbsps olive oil

1 lime, squeezed

Salt & black pepper
Mix mango salsa ingredients together in a bowl. Salt and pepper thoroughly and place in the fridge for 15 minutes.

Heat the tortilla in the oven so they become soft.

Sprinkle fish fillets with cumin and paprika. Salt, pepper and butter fry over a medium heat in a pan for about 5 minutes.

Layer the lettuce, avocado, fish and mango salsa in tortillas and enjoy.
