DIFFICULTY

EASY

A twist on taco night with these easy MSC-certified cod tacos drizzled in a creamy cilantro lime sauce.

For the fish:

1 pound of MSC-certified cod fillets

1 tbsp olive or coconut oil

1 tbsp lime juice

1 1/2 tsp chili powder

1/2 tsp paprika

Salt and pepper

1 avocado

6 corn tortillas

For the slaw:

1/2 small red cabbage, chopped

1/4 cup cilantro

Juice of 1 lime

Salt to taste

For the cilantro lime sauce:

½ cup sour cream

½ avocado

¼ cup cilantro

Juice of 1 lime

Salt, to taste
1. In a medium bowl, mix together chili powder, paprika and salt and pepper (to taste). Sprinkle the mixture over both sides of your cod fillets.

2. Combine all of the cilantro lime sauce ingredients in a food processor or blender and pulse until combined.

3. Combine all of the slaw ingredients in a large bowl and toss to coat.

4. Heat either olive or coconut oil in a large pan over medium-high heat. Place fish in pan and cook about 4-5 minutes per side, depending on thickness. After cooked, transfer the cod to a plate and flake into chunks for tacos. If desired, warm corn tortillas in the same pan for about thirty seconds. Distribute cod evenly between tortillas, add sliced avocado, slaw and top with cilantro lime sauce.
